STRAWBERRY CHICKEN SALAD
VIDEO INCLUDED BELOW:
TIPS FOR MAKING THIS RECIPE:
- This is a great recipe for any leftover grilled chicken you may have (it's perfect with my GRILLED ITALIAN LEMON GARLIC CHICKEN). Or, to make it even faster to prepare, just pick up a rotisserie chicken or some of the grilled cooked chicken you can find in stores these days.
- Try mixing this up with different proteins. Grilled steak or salmon also work well with this recipe.
garlic powder
fresh black pepper
boneless, skinless chicken breasts
olive oil
strawberries
sliced almonds
poppyseed dressing
raspberry vinaigrette
HOW TO MAKE STRAWBERRY CHICKEN SALAD:
Combine salt, pepper and garlic powder in a small bowl. Start by brushing oil on chicken breasts and then season with the salt, pepper and garlic powder seasoning.
Grill chicken on your barbecue or indoor grill pan. Grill for 5 minutes on each side, or until chicken is thoroughly cooked. Set aside. On two plates, add the romaine lettuce, sliced strawberries and almonds. Slice your grilled chicken and place on top. Mix together the poppyseed dressing and raspberry vinaigrette together.
Pour over the salad and dig in!

Wonderful salad..I added some glazed pecans and bacon to this salad to kick it up a notch. :o)
Really, 1 1/2 CUPS of dressing. I am surprised no one has commented on that is so much for a 2 person serving. Did I miss something, if so I appologise.
