Beef and Bean Cowboy Casserole

Beef and Bean Cowboy Casserole is a recipe made with ground beef, bacon, beans and cheese and then it’s cooked on the grill for a true campfire meal!

A HEARTY CASSEROLE RECIPE

I love good ole campfire-style recipes. Every time I grill a recipe that involves beef and beans, I always think of the old images of chuck wagon cooks. This cowboy casserole recipe is sure to become one of your new favorites! Serve it up with a nice green salad and you have the perfect meal! Leftovers warmed up really well too. See my notes in the recipe card for how to make it in the oven.

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)

  • ground beef
  • onion
  • maple or brown sugar bacon
  • BUSH’S® Maple Cured Bacon Baked Beans
  • shredded mozzarella cheese

HOW TO MAKE BEEF AND BEAN COWBOY CASSEROLE:

Brown and crumble ground beef in a large frying pan along with diced onion. Note: I seasoned with salt, pepper & a little garlic powder. Drain excess grease and set aside.

In the same pan, fry bacon until half way done (about 5 minutes on each side.) Season with a little salt & pepper. After cooking, place bacon on paper towels to remove excess grease.

In the bottom of an aluminum 9″x13″ baking pan, layer half the ground beef.

Layer one can of BUSH’S® Maple Cured Bacon Baked Beans

Next, layer 2 cups shredded mozzarella cheese.

Then layer half the slices of partially cooked bacon.

Then continue with the same layers: ground beef, beans, mozzarella and bacon. I decided to cut the bacon up into smaller pieces on top to make it easier to serve.

Cover entire dish with aluminum foil. Bake in covered grill for about 30 minutes (until cheese is melted and everything is bubbly.) Note: I tried to keep my grill temperature around 350 degrees F.

  • 2 pounds ground beef
  • 1 small onion, diced
  • salt, pepper and garlic powder (about a teaspoon of each)
  • 1 pound maple or brown sugar bacon
  • 2 (28 ounce) cans BUSH’S Maple Cured Bacon Baked Beans
  • 4 cups shredded mozzarella cheese
  • sliced green onions, for topping (optional)

Instructions

  • Brown and crumble ground beef in a large frying pan along with diced onion. Season with salt, pepper and garlic powder. Drain excess grease and set aside.

Notes

  • This dish can also be cooked in the oven. Preheat oven to 350f degrees and cook for 30 minutes.

    I made this today with a few changes, I only used 1 can of bushes baked beans. I’m glad I only used 1, 2 would have been too much for me. (Too sweet) I also know I’m not a huge fan of mixing sweet and savory so I might try regular bushes baked beans or their grillin’ beans next time. While I enjoyed this dish I am anxious to try it with savory bushes beans!

  2. Could I make this using turkey bacon and The Bush’s Best Vegetarian Baked Beans? Maybe add in a little maple syrup for the sweet flavoring?

  3. The recipe calls for an onion but I don’t see where it was used. Can it be cooked/brownedwith the ground beef?

  4. Sound really good, I think it could work in the crock pot also (low 4 hrs) layered the same way, Will be trying it.

  5. Northwoods Pie looks absolutely yummy, although this would not be low carb I think. Look at the sugar on those beans.

    1. Hi Linda! I sure did! For this style of beans (Maple Cured) there is 10 grams of sugar per serving. Also, beans have fiber too. I know a lot of folks figure this in different ways. For example, my Mom (who is diabetic) will take the carbs minus the dietary fiber. So it’s not carb-free but it is low carb. Hope that helps! This was an awesome recipe! I think for those that are okay with carbs should try it over baked potatoes. We had some leftover and did that the following night for dinner – so yum!:)
