My Favorite Chicken and Dumplings
Rain, rain go away. The rain has been rough on us this week, y’all. Really rough. Flooding has been horrendous. There have been mudslides and swollen rivers. It’s been pretty bad here in the mountainous regions of Virginia. My home and neighborhood hasn’t seen the worst of it, so I am thankful, but there are many others who are suffering and farms that are completely under water. Praying for it to dry up and for the sun to come out this week!
In this week’s meal plan, I am making my Favorite Chicken and Dumplings. It’s really a shortcut version since I don’t have time to properly boil a chicken for homemade stock so I’m using a good store-bought chicken stock. I tried making homemade chicken stock in the Instant Pot. It wasn’t bad but it still doesn’t give the same flavor as simmering on the stove all day. I think a good store-bought version tastes about the same as it being done in the Instant Pot.
