Easy Microwave Pizza Potatoes
The other weekend my son and I were hanging out at the house (my husband was at work) and well, we were hangry! I really needed to go grocery shopping but we didn't have time for all that. We needed food - stat! So I went digging around in my pantry to see what I could whip up. There was a can of corned beef, some random cans of veggies, a squeeze bottle of pizza sauce and a couple bags of The Little Potato Company’s Blushing Belles.
Pantry Staple
I'm gonna let y'all in on a little secret - always keep a bag of Little Potatoes on hand. You never know when you'll need them. You can use them as a side dish but you can also use them as a building base for a main dish as well. Plus, you are getting some great nutrition to boot. These Creamer potatoes are gluten-free and packed full of essential nutrients and fiber!
Potatoes are veggies too!
Little Potatoes are perfectly bite-sized, pre-washed and ready to go. The skins are tender and the insides are buttery. They really are the perfect little veggie. The Blushing Belle varietal that I am using today is a red Creamer potato. It has tons of versatile uses so I knew it would perfectly in whatever I wanted to make. And I knew it would cook up quickly in the microwave.
Pizza and cheese
When I looked in my fridge, I noticed I had some leftover mozzarella cheese from some Pizza Soup the night before. I knew exactly what I was gonna try to make. And these Microwave Pizza-tatoes were created. Y'all - this recipe turned out ridiculous! It was so good. My son and I absolutely loved it.
It was filling and I don't think I have ever had anything quite like it. Seriously, I wished I would have had some pepperoni in my pantry. I would have added that on there too. Did I mention it was all ready in less than 10 minutes? I really should remember to use my microwave more often!
Ingredients:
1.5 lbs Blushing Belles by The Little Potato Company
½ tsp. Italian seasoning
1 tsp. garlic salt
3 tbsp. cold salted butter
½ cup pizza sauce
1 cup shredded mozzarella cheese
Directions:
Dice Little Potatoes into smaller 1-inch pieces. Place them into a shallow microwaveable bowl or plate. I am using a glass 9-inch pie plate.
Slice butter and place on top of potatoes. I love this neat little trick of shredding cold butter like cheese. It helps to better distribute the butter evenly over the top. Sprinkle Italian seasoning and garlic salt on top.
Cover plate with microwave-safe plastic wrap and poke a couple of holes in it.
Place in the microwave and cook for 5 minutes.
Remove potatoes from the microwave and carefully remove the plastic wrap (careful - there will be hot steam!) and stir the potatoes well. Cook's Note: You could stop at this point and have a delicious side dish already done. They are perfectly cooked and would make a great side for chicken or steak! Make sure the potatoes are fork-tender. If not, pop them back into the microwave for an additional 2-3 minutes.
Stir in pizza sauce with the cooked potatoes.
Then top with shredded mozzarella cheese. Note: For a pop of color, sprinkle on some dried parsley.
Put the plate (uncovered) into the microwave for about 2-3 minutes until cheese is completely melted.Then dig in!
