Melted Ice Cream Cake (+Video)
This Melted Ice Cream Cake recipe is easily made with cake mix, melted ice cream and eggs. So easy! Cake and ice cream in one!
A CAKE MADE WITH MELTED ICE CREAM
Nope, it’s not an ice cream cake that has melted. And nope, this cake is not a cake that is meant to look like an ice cream cone that has melted. This is a cake made with melted ice cream. Say what? Yes, melted ice cream! You are replacing the liquid ingredients in the cake with ice cream. It results in a slightly more dense and ultra flavorful cake!
ONLY 3 INGREDIENTS!
This cake only requires 3 ingredients (not including the optional glaze, of course)! Cake mix, melted ice cream and 3 eggs. That is it. And the combinations are endless! See my notes below for other combinations that I love. This time we made it with Birthday Cake ice cream. If you want to take it up a notch, try making my optional glaze listed in the recipe card.
INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)
- white cake mix
- melted ice cream (any flavor you love)
- eggs
Note: Pint size premium ice creams like Ben & Jerry’s or Haagen Dazs come in perfectly measured containers for this. One (16 oz) container of those premium ice creams works great!
HOW TO MAKE MELTED ICE CREAM CAKE:
Measure out two cups of the melted ice cream. You need to measure the ice cream after it has melted, not while it’s still frozen.
Preheat oven to 350F degrees. Spray bundt pan with nonstick cooking spray. You know I love my Baker’s Joy spray!
Combine cake mix with eggs and melted ice cream. Stir until combined well. Pour batter into greased bundt pan.
Bake for about 33-36 minutes. Until it springs back to the touch and a toothpick comes out clean.
Allow cake to cool completely then turn cake out onto a serving plate. For the icing, whisk together confectioner’s sugar with the milk. Adding enough milk until it has reached the desired consistency.
Then drizzle the icing all over cake. Finally, drop a few sprinkles on top.
Slice and serve!
Notes: The combinations for this are nearly endless. Especially with all the new and fun ice cream flavors out there. I can tell you that this is very good with Ben & Jerry’s Chunky Monkey ice cream with a chocolate glaze on top. Cherry Garcia is another yummy one! Also, butter pecan is another favorite too.

- 3 large eggs
For the icing:

- 2 Tablespoons milk
- sprinkles
Instructions

There’s just 2 of us, so how long will it keep refrigerated? Can I reduce recipe just for 2 and what size pan should I use?
Hi Priscilla, I’ve never thought of cutting this recipe of half. I think you could freeze it though if you made the whole thing. This kind of cake freezes really well. So you could eat half then freeze the other half for later! 🙂
Is it possible to make the cake without cake mix, using just the ingredients for cake (flour, eggs, baking powder etc.)?
You should be able to substitute a simple cake recipe for cake mix.I would use cake flour perhaps in the ratio of 2 cups cake flour to 2 cups sugar .Then 3 eggs ,a stick of soft butter. Creamed with the sugar,a teaspoon of vanilla,Sift the proper amount baking powder if using regular milk or baking soda if you need to use buttermilk,then about 1/2 teaspoon salt( check this).Then add your flour mixture alternating with you milk ,besting after each addition .m Then follow directions on baking and cooking in a Bundt pan.Do double check these amounts because it is coming from memory .No time to look it up

Can another flavor of cake be used or must it be white? I want to use chocolate or fudge cake mix.
Any flavor works! I love Ben & Jerry's Cherry Garcia with devils food mix and pumpkin ice cream with spice mix.
Has anyone tried it with a gluten free cake mix? Just wondering how that would work.
You can also made Ice cream bread:
2 cups of melted ice cream
1 1/2 Cups Self-Rising flour
Line pan with parchment paper or spray with Baker's Joy
Bake at 350 for about 45 minutes.Remove from pan to cool.
for self rising flour-1 1/2 tsp. baking powder and 1/2 tsp salt to each (1) cup of flour.
I only had funfetti cake mix. Worked wonderfully!

Typically any grease on the pan should work; spray is just a convenient way to go. As for your second question you can really use any cake mix and any ice cream you want. Word for the wise though, as one comment said earlier watch out for two many candy pieces since they could settle and burn.

Judy, you could make a chocolate glaze from scratch if you like but I just bought a store bough tub of icing and heated it up just for a few seconds in the microwave (make sure you remove the foil covering and lid first 🙂 and then drizzle it over the top of the bundt cake. Works really well!
I have made this style of cake a few times, the one tip I have to share is not to use a ice-cream that has a ton of candy pieces mixed in it. Such as peanut butter cups or big pieces of candy bar.
For me, the candy pieces settle at the bottom of the baking pan (closest to the heat) and can burn.

Hi Kim! You could certainly bake this in a standard 9×13 baking pan. Follow the directions above and bake in a well-greased pan at 350F for about 28-32 minutes. Hope that helps!
You could also use a tube pan.
