Old School Hamburger Hash

Hamburger Hash is a budget-friendly meal that is made from ground beef, diced onions and diced potatoes. Serve with some fried eggs!

A DELICIOUS, CLASSIC RECIPE

One of the more frequent questions I receive is how to deal with leftovers. It’s usually some sort of leftover vegetable or meat. And recently, I have received a number of questions about leftover potatoes specifically. We end up making too many roasted potatoes and we don’t want to throw perfectly good roasted potatoes away, right? So how can we turn them into something new? Let me help with that!

After I shared my recipe for Creamy Hamburger Hash Soup, I got a couple of emails asking for a Hamburger Hash recipe. And honestly, it’s really not a “recipe”. You kinda just cook some meat and add onions and diced cooked potatoes and season it well. But then I realized that this would be the perfect recipe to share to make with leftover cooked potatoes! It’s budget-friendly and you can even serve it with some cooked eggs on top. Or you can switch out the ground beef for corned beef. It’s that easy!

OVEN-ROASTED POTATOES

For this post, I am going to use some Oven Ready Little Potatoes (Onion Medley flavor). I didn’t have any leftover potatoes to use as an example so I had to make some. These little packages of Oven Ready/Grill Ready Little Potatoes come with everything you need to make perfect roasted potatoes. They even come in their own baking tray so you don’t have to make more dirty dishes to wash! 🙂 They also have microwaveable creamer potatoes as well. You can usually find them in the grocery store over in the produce section where all the other potatoes are located.

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)

Oven Ready Onion Medley Little Potatoes (or leftover cooked potatoes)
lean ground beef
shallot
salted butter
salt and pepper, to taste

HOW TO MAKE HAMBURGER HASH:

If you aren’t using leftover roasted or cooked potatoes, you’ll need to prepare some. These Oven Ready/Grill Ready Little Potatoes couldn’t be easier. They come in an aluminum baking tray and the seasonings are already provided.

All you have to do is drizzle a couple tablespoons of olive oil onto the creamer potatoes.

Then sprinkle seasoning onto the potatoes and give it a little stir. Then bake for 30 minutes at 450f degrees.

Then, once they are completely cooled, just dice them up.

In a large skillet over medium-high heat, brown and crumble the ground beef along with the diced shallot. Season well with salt and pepper.

Drain any excess grease, place 2 tablespoons of butter into the pan to melt. Put cooked beef back into the pan, then add in the diced Little Potatoes. Turn the heat up and season the mixture with salt and pepper and stir.

Cook’s Notes: The most important part of making any kind of hash is making sure you season it well. You will need more salt and pepper than you think you’ll need. I start off with about a teaspoon of salt and pepper and then go from there. It’s really a matter of seasoning and tasting.

Using the back of a spatula, press down on the hash mixture. This will help the the beef and potatoes to get a little crispy (which really is the best part!) Let it cook for a couple of minutes. Then flip it all over and do the same process again.

At this point, you can turn down the heat and crack a couple of eggs over top, place the lid on and allow them to cook for a couple of minutes. Or you can serve it, as is, on the side.

Ingredients

  • 1 pound Oven Ready Onion Medley Little Potatoes, cooked and diced (or leftover cooked potatoes)
  • 1 pound lean ground beef
  • 1 shallot, diced
  • 2 Tablespoons salted butter
  • salt and pepper, to taste

Instructions

  • If you aren't using the oven ready Little Potatoes you'll need to prepare some. If using the oven ready little potatoes, you'll cook them up first by drizzling the potatoes with olive oil then sprinkling with the seasoning packet and stir to combine.
  • Then bake for 30 minutes at 450F degrees. Once cool, dice them up and set aside.
  • In a large skillet over medium-high heat, brown and crumble the ground beef along with the diced shallot. Season well with salt and pepper.
  • Drain any excess grease, place 2 tablespoons of butter into the pan to melt.
  • Put cooked beef back into the pan, then add in the roasted and diced Little Potatoes. Turn the heat up and season the mixture with salt and pepper and stir.

Notes

  • If you can’t find this brand and seasoning of Little Potatoes – no worries! Just dice then boil some baby potatoes then drain. Since the potatoes won’t have the same seasoning on them, just season your hash with some dried onion flakes and a little garlic powder (in addition to the salt and pepper).

    This is great, I’ve been making a similar version for years. I’m trying your way tonight. Making the potatoes in my air fryer. I usually serve it as burritos.

    MY mom has been making this for 60 years, Add a couple of teaspoons of Worcestershire and 1 1/2 cups of water with beef bouillon. Omit salt as it’s in the boullion. It’s a great camping dish. I eat with a little yellow or Gulden’s mustard. We grew up on Hamburger Hash around a campfire and camp stove.Worked out great on Grandpa’s Cattle Drives too.

    I made a bbq the other night and had a bunch of leftover hamburgers and some baked and sweet potatoes. I followed this recipe and had the roasted sweet potatoes on the side. I added some spices to the mixture and they ate it all up!

  4. My mother was an excellent cook. So many of her dishes were a pinch of this and a pinch of that. Very few recipes were written down. Everything was delicious! (maybe not the rivels she put in soup – never did and never will like them!) I can’t wait to try your American Goulash recipe! I know she always added a little sugar to her tomato based sauces, so I am sure this will be perfect! Your leftover potatoes and hamburger took me back so many years! I remember it well and always loved it, too. Thanks for my trip down memory lane!

    Incredible! Made too much but that’s just fine. I will have no problems with the leftovers. It’s just me but I can handle it. Used little potato’s and no eggs for dinner. Seasoning perfect. Stepping out of my box and trying new things. Will be back for more recipes very soon.

  7. Any idea what you could use if you don’t have the potatoes with the seasoning? I bought the microwavable little potatoes but don’t have this brand locally.
