We all lead busy lives these days, right? Often times we are so busy with our work, the kids’ school and sports activities, yard work, grocery shopping and all the other responsibilities we have, we forget to stop, take a breath and just enjoy some time with our friends and family. What ends up happening with me is I realize I have a few hours free and then I call up a friend or two and see if they’re free and we get together for a fuss-free spontaneous brunch. I mean, every get together is better with food! Sometimes those last minute plans really are the best.
Libby’s® Canned Fruit is one helpful tool to prep your brunch super fast and simply! No need to peel and slice peaches. Plus, all of Libby’s® canned fruits are packed at the peak of freshness so you know they will be perfect every single time.
Ham, Cheese & Peach Tortellini Pasta Salad
The recipe I am sharing today is perfect for those spontaneous brunches! I am using some leftover ham that I had from the night before. I pulled out some cheese and lettuce I already had in my fridge. Throw in some cooked cheese tortellini (or your favorite pasta) along with Libby’s® Peach Slices and you have a delicious (and filling) brunch recipe! It tastes so fresh and my easy little trick with the salad dressing will make it taste like you spent hours preparing it but we all know you only spent minutes!
1 pound cheese tortellini (fresh or frozen)
1 (16 oz.) bottle poppyseed dressing
1 (15 oz.) can Libby’s® Peach Slices, 100% Pure Fruit & Juice
1 1/2 cups cooked ham, diced into 1-inch cubes
1 (16 oz) block cheese, diced into small chunks (or cubes)
2 cups chopped lettuce
In a bowl or a mason jar, combine poppyseed dressing with 4 tbsp. of juice from the can of Libby’s® Peach Slices. Then drain the rest of the juice from the peaches. If preferred, slice the peaches in thirds to make them more bite-sized.

This Ham, Cheese and Peach Tortellini Pasta Salad only has a handful of ingredients but is a knockout of flavor. It's all combined with chopped lettuce and a creamy poppyseed dressing. Perfect for lunch, brunch or as a side dish at a barbecue.
- 1 pound cheese tortellini fresh or frozen
- 1 16 oz bottle poppyseed dressing
- 1 15 oz can Libby's Peach Slices, in juice
- 1 1/2 cups cooked ham diced into 1-inch cubes
- 1 16 oz block cheese diced into small chunks (or cubes)
- 2 cups chopped lettuce
- Prepare cheese tortellini according to package directions.
- Drain tortellini and rinse with cool water just to cool it off slightly.
In a bowl or a mason jar, combine poppyseed dressing with 4 tbsp. of the juice from the can of peach slices. Then drain the rest of the juice from the peaches. If preferred, slice the peaches in thirds to make them more bite-sized.
Stir dressing together well. Or if you are using a mason jar, screw the lid on and give it a good shake.
- In a large bowl, combine cooked tortellini, diced ham, cubed cheese and sliced peaches.
Then pour poppyseed dressing over salad. Give it all a good stir.
- Finally, stir in chopped lettuce and gently stir.
- Serve immediately. Or cover with plastic wrap and pop into the fridge to serve within 24 hours.
- Serve it up!
