Green Goddess Ranch Dip
The Big Game is coming up! Now, I’ll be the first to say that I don’t pay much attention to football. However, I do pay a whole lotta attention to football food. I am all about game day snacks. There is nothing better than a football game day spread. Finger food at its finest, if you ask me. I’m kind of a grazer, you know what I mean? I like to have a little bit of everything. Don’t get me wrong, I love my usual stand-by recipes but sometimes you want a fresh take on the usual. Bring a little something new and fresh to the party like this Green Goddess Ranch Dip.
Give me ALL the dips
So, when I was browsing some new dip ideas, I found Hidden Valley’s Dip Genius. You really should go play around with it. You can choose dips based on a country, on a mood, on an event (like the big game!) and even scroll through some of the most popular Hidden Valley Ranch dip recipes. So, I decided to go with Greece as my chosen country. I have always wanted to travel there so it was an easy pick. Then Dip Genius asked what kind of flavor profile sounded good: Crunchy, Melty, Fresh, Hearty or Hot? I chose fresh and this is the dip that came up. It is definitely Greek inspired since it is very similar to tzaziki sauce. Made with Greek yogurt, Hidden Valley® Greek Yogurt Dips Mix, cucumbers and fresh herbs with just a bit of lemon to brighten the flavors.
I gotta say, this was one of the best dips I’ve made in a while. It is creamy and tangy and goes really well with crunchy, salty tortilla chips or fresh veggies. You could even add a tad bit of fresh garlic to it for an extra punch of flavor. And with these new Hidden Valley® Greek Yogurt Dips, you get all of the flavor but without all the fat.
1½ cups Greek nonfat yogurt
1 cup frozen chopped spinach, thawed
¾ cup cucumber, finely diced
1 tablespoon lemon juice
¼ cup minced parsley
2 tablespoons minced chives
Mix contents of dips packet with yogurt.
Squeeze spinach to remove as much liquid as possible. I just grab it by the handful and squeeze it over the sink. Add to yogurt mixture.
Stir in cucumbers, lemon juice, parsley, and chives. Stir well to combine.
Refrigerate at least 1 hour to thicken. It gets better the longer it sits so it’s perfect to make a day ahead of time. Serve with tortilla chips and fresh veggies!
