A FUN, SIMPLE WEEKNIGHT MEAL!
Around my house we have meals that we call the Working Mom’s Specials. These meals, like these Garlic Bread Chicken Parmesan Pizzas, are our easy to make meals where we don’t have the time (or energy) to be fussing with a lot of ingredients or making a bunch of dirty dishes to be washed. Plus, these taste really, really good!
TIPS FOR MAKING GARLIC BREAD CHICKEN PARMESAN PIZZAS:
- Any pre-cooked chicken will work for this: grilled, rotisserie or even chicken nuggets
- In addition, marinara sauce can be substituted for the pizza sauce. You might want a little extra for dipping!
- To serve: I just grabbed one of those prepackaged Caesar Salad Kits that are in the produce section to serve with this.
INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)
- Garlic Texas Toast
- pizza sauce
- precooked chicken nuggets or popcorn chicken
- shredded mozzarella cheese
HOW TO MAKE THESE GARLIC BREAD CHICKEN PARMESAN PIZZAS:
Preheat oven to 400F degrees. Arrange garlic bread (butter side up) on a baking sheet.
Bake frozen garlic toast for about 3-4 minutes until bread is no longer frozen and just starting to brown on the edges.
While, the bread is toasting, start dicing up the cooked chicken. Cut them up into 1/2-inch pieces. When bread is ready, spread sauce on each slice of garlic toast (or loaf, if using)
Then evenly layer diced chicken on top of sauce.
Bake for about 6-8 minutes just to get that chicken warmed back up. Then take out and top each slice with some shredded mozzarella.
And pop it back into the oven for another 3-4 minutes just until cheese is melted and bubbly.
And enjoy!

I love cookbooks and trying new recipes so this cookbook would be great. Quick and easy recipes are especially helpful.
Trying to cook with a diabetic six year old gets complicated. A recipe book with simple meals, especially those with few ingredients, are a lifesaver when trying to figure out his serving sizes and carbohydrate intake. Being able to easily substitute prepackaged ingredients that have serving sizes and carb content printed on the side helps even more. I would love this book.

This would be the perfect cookbook for me. I'm someone who enjoys having delicious meals but who hates putting out so much effort that the pleasure of the entire process is gone by the time I'm done. Quick and easy is just my style – as is the Southern influence!
elaineb1@ymail.com I pinned your cookbook giveaway and here is the link
elaineb1@ymail.com I would love to have the recipe book. My daughter has just finished college and is moving out on her own and I would love to give this to her for her new appartment so she can learn how to cook better. Thanks
this cookbook could be the shot in the arm i need to go beyond the usual menu schedules, which we're all getting tired of
I'm (almost)a college graduate, so between a full course load and trying to find a job/internship is very time consuming, leaving me little time or energy to come up with ideas for meals. This book would mean quick inspiration for meals instead of ramen or that cup of easy mac we all love after a busy day. 😛

I love to cook and try new recipes. I would love to have this one to try out all the great recipes inside. The ones that I can see look delicious!!!
I agree with the comment about being in a rut. I am a single mom who only has so much time & energy to go around. I would love anything that gives me quick & easy dinner ideas. Also think some of these ideas would be easy enough for my child to help prepare.
This would help me simply because I am obsessed with cookbooks and can't get enough of them!
Southern Living meals are so good and you just can't beat quick and easy. This book looks wonderful. Thanks for offering the chance to win.
I'm always looking for quick, good tasting, recipes with not hard to find ingredients. I love Southern Living magazine recipes and use them often. I always make a 2 week menu before I shop so I know what we are having the next 2 weeks, I just never actually schedule what is happening on what day because you never know how the day is going to turn out.
I absolutely love a quick meal and this book looks like it would be full of all sorts of ideas for our family! I would love to have a copy and actually be able to answer the question, "what's for dinner?"!
