It’s that time of year. Summer! When many of us look for lighter, healthier salads. We also want salads without mayo so we can take them to picnics and BBQ’s. And we want it with ingredients that won’t make us feel like a stuffed hog afterwards. Amiright? 😉
“Garbanzo? Isn’t that a character from the Muppets?” my son asks me. “No, honey. That’s Gonzo.” I reply. Ha! Garbanzo beans (also known as Chick Peas) are the same bean used to make hummus. They have a light, tender taste with a slightly nutty flavor. They don’t need to be heated up which makes them the perfect summer bean. The garbanzo bean is the star of this show. So, don’t short change your best bean dishes by buying just any beans. Always keep BUSH’S® Beans in your pantry! Today I am using the new BUSH’S® Organic Garbanzo Beans. Roasted is resplendent
If you have never roasted a garbanzo bean, you are missing out! They toast up beautifully and get a wonderful crunch to them. All you have to do is coat them with a bit of olive oil and any seasoning you love. I like garlic salt and Italian seasoning. Then pop them into the oven for a few minutes. Just like you are toasting nuts. It is the perfect snack! So good!
This salad – oh my!
Now, let’s get to this salad. I decided to use one of my favorite vinaigrettes for this. I use it on my Italian Chopped Salad recipe and I can’t get enough of it. It is light, healthy and no mayonnaise is involved. Also, I wanted to use lots of garden fresh veggies. Plus, I’m gonna share with you my trick for cooking fresh corn in the microwave. SO easy! It comes out perfect every time!
for the salad:
2 ears fresh corn
2 (15 oz) can BUSH’S® Organic Garbanzo Beans, drained and rinsed
2 English cucumbers, diced
3 Roma tomatoes, diced
1/2 red onion, peeled and diced
1 cup Feta cheese, crumbled
2 green onions, sliced (optional)
Arrange both ears of corn, un-shucked, in the microwave. If you prefer, you can set them on a microwaveable plate or tray. Cook for 5 minutes. Allow to cool. Set the ears on a cooling rack or cutting board to cool. When the silks and top leaves are cool enough to handle, quickly shuck the husks off the cobs. Then cut the corn off the cob.
Drain and rinse both cans of BUSH’S Organic Garbanzo Beans.
In a large bowl, combine corn, BUSH’S Organic Garbanzo beans, diced cucumbers, diced tomatoes, diced onion and Feta cheese crumbles. Add sliced green onions, if using.
In a jar, add in all the dressing ingredients. Pop the lid on nice & tight.
Then give it a really vigorous shake.
Pour dressing over salad and stir well.
And serve! This is okay to pop in the refrigerator overnight.
Stir right before serving.
- for the salad:

- 1 cup Feta cheese crumbled

- 1/2 cup red wine vinegar
- 2 tbsp honey
- 1 tbsp dijon mustard
- 1 tsp Italian Seasoning
- 2 cloves garlic minced
- salt and pepper to taste

If not serving right away, cover with plastic wrap and put in the refrigerator. Serve within 24 hours.
