Frito Corn Salad (+Video)

This Frito Corn Salad is a unique appetizer that combines corn kernels, cheese, taco seasoning, Fritos, green peppers and red onion. So good!

A FAVORITE SUMMER DIP RECIPE

Need a unique side dish to take to your next BBQ or potluck? Sure, we all love our Macaroni Salad and Potato Salad and Deviled Eggs. A BBQ wouldn’t be the same without those classic side dishes. While I can never have too much tater salad, it is nice to have a bit of variety. Enter this Frito Corn Salad.

FREQUENTLY ASKED QUESTIONS:

Do I have to use the whole bag of Fritos?

Some folks put in half the crushed Fritos at the time they make it, then add the other half in right before serving. But you don’t have to use all of the Fritos. It’s a matter of preference.

Do I need to use freshly cheddar cheese?

I love to use freshly shredded cheddar cheese but you can certainly use pre-shredded cheese.

Can I use canned corn?

Yes you can. If you don’t have time to thaw out a bag of corn, then use 2 (15 oz.) cans of corn that are drained really well.

What about other flavors of Fritos?

This is where you can have some fun! Try switching out the flavors by using chili cheese flavor or BBQ flavored Frito corn chips.

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • sweet corn
  • cheddar cheese
  • green pepper
  • red onion
  • mayonnaise
  • taco seasoning
  • Fritos corn chips
  • black pepper

HOW TO MAKE FRITO CORN SALAD:

In a large bowl, combine thawed corn, cheese, diced bell pepper and onions. Stir well.

Then add in mayonnaise and taco seasoning.

Stir until thoroughly combined.

I like to season it with a little bit of pepper too (this is optional.)

Then just before serving, stir in crushed Fritos so they stay nice and crunchy. Some folks put in half the crushed Fritos at the time they make it, then add the other half in right before serving. You do not need to use the entire bag if you don’t want that many corn chips.

Notes

  • You do not need to use the entire bag of Fritos corn chips. This is entirely up to you and your tastebuds.
  • Using pre-shredded cheese in a bag works just fine.
  • If you don’t have time to thaw out a bag of corn, then use 2 (15 oz.) cans of corn that are drained really well.
  • Also, for a big bump in flavor, try using the chili cheese or BBQ flavored Fritos.

    Best new salad recipe!!! WOW! Everyone of my friends is making this now. I use fresh corn cut off the cob, 1/2 red pepper, 1/2 green pepper (for color). Put Fritos on top when serving. Again, WOW! YUM!!!!

    I took this to a Christmas party tonight! Finally I found something DIFFERENT that no one else will have! Getting real tired of the fruit tray, veggie tray, chips and salsa, and bar b q meatballs! HA! Everyone went crazy over it. Came home with an empty bowl!!

  8. I make a rendition of this using corn, red onion, red pepper, mayo, cheddar cheese and Fritos Chili chips. Basically in the same recipe amounts. The chili chips take it to the next level. I do not add any additional spices at all the Fritos add all the spice needed.

  9. Oh Brandie! My hubs and daughter made this while on vacation with his family. Can you say devoured and barely a few corn kernels leftover? HUGE hit! They also made your Crock Pot Taco Joes, which were also inhaled. These 2 recipes were made for each other! I am planning on making this salad for the 4th this year so that I can feast on it too!     Oh my, yes! This is a keeper! Even when I didn't have enough cheddar and used 1/2 Mexican cheese and 1/2 mild cheddar, canned corn and only 1/2 my green pepper was good, and I only had a Vidalia onion. It was still good! Took it to my book club lunch earlier this week, and a second batch is going to the basket weaver's guild meeting tomorrow. Every recipe I've 'borrowed' from your site has been very good, thank you so much for sharing! Great-Granny who's tired of cooking but still likes to eat….

Or if you like a bit of kick, try Pepper Jack! I will usually get three different cheeses and let everyone choose their filling. Let me know what you think.     Brandie, I just wanted to say that I discovered Corn Salad about 2 yrs ago when I stalked a Hot Pink serving bowl at a church pot luck. I loved it so much that my family thought I had gone crazy over it. When my son got married in Sept 2013, I cooked the rehearsal dinner myself. I didn't even give them a choice and served Corn Salad as one of the food items. For our Memorial Day cookout, I think I may try those inside out burgers your husband told me he loved so much today. Did he have a favorite cheese? And I had already told my family it was time to start having Corn Salad again 🙂 I think I'll try your tip of using the frozen corn and the Taco Seasoning. Christine I was thinking the same thing Cilantro several colors of peppers I think I would also put the corn into a skillet and lightly blacken it, I would also add green onion tops finely chopped. I don't do bottled dressing but mayo, taco seasoning, and fresh avocado would get the same results…

  17. If your not a mayo fan, replaced it with wish bone guacamole ranch dressing. I have never found the Fritos and use the garden salsa sun chips. I have also added chopped cilantro, bacon bits, olives and red pepper. Also try a Mexican cheese blend instead. Was a great hit recently at our Cinco De Mayo party. FYI its great all year long!
