Easy Skillet Lasagna

This deliciously easy Skillet Lasagna recipe is made with ground beef, onion, garlic, beef broth, Italian diced tomatoes, mozzarella cheese and pasta – all in one pan!

A Simple, Delicious One Pan Meal

If you are looking for a super simple supper. look no further than this easy skillet lasagna recipe. This is one of my family’s favorite weeknight meals. It makes for awesome leftovers too. I always try to buy ground beef when it’s on sale and keep a bunch in the freezer. All the other ingredients are pretty much pantry ingredients that you may already have on hand.

Tips For Making This Meal

  • This can be made with ground sausage or ground turkey.
  • I like to use Mafalda pasta because they are shaped like little lasagna noodles. However, if you can’t find it, just use rotini or penne pasta (as seen in my video below.)
  • For a little extra spice, try adding some red chili flakes.
  • Try adding a dollop of ricotta cheese to really bring out that lasagna flavor!

Mafalda pasta, ground beef, garlic, beef broth, Italian diced tomatoes, Italian seasoning and mozzarella.

How To Make Skillet Lasagna

Brown and crumble ground beef (along with diced onions and garlic) over medium heat.

Drain excess grease. Stir in broth, undrained tomatoes and Italian seasoning.

Bring to a boil. Stir in uncooked pasta and simmer for 12-14 minutes until pasta is tender.

The longer you simmer this, the more liquid the pasta will absorb. So if you want a thicker mixture, just let it simmer longer. Stir in mozzarella cheese.

Serve and top with shredded Parmesan or more Mozzarella cheese.

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced (or 1 teaspoon garlic powder)
  • 2 (14 ounce) cans beef broth
  • 14.5 ounce can Italian diced tomatoes
  • ¼ teaspoon Italian seasoning
  • 2 cups mafalda pasta, uncooked
  • ½ cup shredded mozzarella cheese (more, if desired)
  • grated Parmesan cheese (for garnish, optional)

Instructions

  • In a large skillet, brown and crumble 1 pound ground beef along with 1 small onion, diced and 2 cloves garlic, minced over medium heat. Drain excess grease, place back in skillet.

  • Stir in 2 (14 ounce) cans beef broth, 14.5 ounce can Italian diced tomatoes and 1/4 teaspoon Italian seasoning. Bring to a boil.

Notes

    I see the comments were made back in 2020. someone asked about Ricotta Cheese. But in this recipe. It doesn’t listen Ricotta. it list Mozzarella cheese. Did you replace the Ricotta with Mozzarella?

  2. Hi Brandie, I, don’t mean to mess with your recipe, it has to be good, but can I use a jar of spaghetti sauce in this instead of extra shopping for beef broth and canned tomatoes? Maybe you have a recipe already to do it that way? Thanks!

    1. The noodles need that liquid to cook. Spaghetti sauce is a bit too thick. I suppose you could add a bit of extra water in there to compensate. But I haven’t tested it myself so I’m not sure how much exactly you’d need

    Loved the Easy Skillet Lasagna. If I had read the recipe right to begin with I would have understood why my noodles were sticking. First, I only used 2 cups of beef broth (water mixed with Knorr's bouillon) instead of 28 oz. Second, I did not use a nonstick pan. Having said that I kept adding more water and it turned out fine. Well better than fine, it was great! Followed the recipe except substituted half ground turkey/half Italian sausage for beef and used fire roasted garlic canned tomatoes plus added fennel seed. I will definitely make this one again! Thank you so much for sharing!!

      Amazing as usual! Your recipes are probably my fave because they always turn out great. My husband is a picky eater and he loved this. I realized after reading the comments, that I used 2 cups of beef broth (2 cups water and 2 bouillon cubes) and not 2 cans. I added water during the cooking and it turned out fine. I didnt even realize I had read it wrong. Will add this to my recipe book to have again! Thanks Brandie!
