Grilled Taco Potatoes
I get pretty creative in the summer months when it comes to grilling out. I tend to use my slow cooker and my grill a lot so as to not heat up the inside of my house. My oven is on the top floor of my home so things get hot pretty quickly when I turn it on. Anyhow, a couple months ago, I created a recipe for Microwave Pizza-tatoes. We all loved that recipe so much that we started thinking of other fun Little Potato toppings. One of the ideas was for these Taco-Tatoes. It's so simple but so delicious! Grilled Creamer potatoes are topped with seasoned ground beef, lettuce, shredded cheese, diced tomatoes, sour cream and salsa. And you never even have to turn on your oven!
Little Potato goodness
For this recipe I am using my favorite Creamer potatoes from The Little Potato Company. I am using their for this recipe. These are already packaged in an oven/grill-safe cooking container and seasoning is included. All that is needed is a bit of oil or butter. These varietals are perfect, creamy bite-sized morsels. However, if you'd like, you can certainly cut these in half or in quarters before cooking. These can be made on a camping trip to switch up the usual hamburgers and hot dogs that get old after a while. Your friends and family will thank you!
Nutritious and Delicious
These special Little Potatoes are not only butter-y and creamy but they pack a lot of nutrition in a small package. Naturally fat-free, sodium-free, cholesterol-free, gluten-free and only 120 calories per serving. These Creamer potatoes are truly a perfect part of our family’s balanced diet. Packed with essential vitamins and minerals and containing 4.5 cups of vegetables per 1.5 lb bag, they are a great side (or main dish!) any night of the week.
Ingredients:
1 (1 lb) package
1 pound cooked and seasoned taco beef
1 cup shredded lettuce
1 cup shredded cheddar cheese
½ cup diced tomatoes
½ cup sour cream, for serving
salsa, for serving
Directions:
Preheat oven or grill to 450f degrees.
Remove the cardboard sleeve, seasoning pack and plastic film from the package of Little Potatoes. Add the seasoning pack contents and 2 tbsp of oil to tray. Toss until well coated.
Place uncovered tray on grill or in the oven. Cook for 30 – 45 minutes or until tender, stirring occasionally.
While potatoes are cooking, you can prepare the taco-seasoned beef (if you haven't done so already.) Once potatoes are finished cooking, remove from heat. Then top with your favorite toppings: lettuce, tomato, shredded cheese, sour cream and/or salsa.
Cook's Notes: Many grocery stores now carry premade taco-seasoned ground beef that can be heated in the microwave. It is usually found in the refrigerator section of your grocery store (near the refrigerated side dishes.)

- 1 pound package Oven/Grill Ready Garlic Herb Little Potatoes
- 1 pound cooked and seasoned taco beef
- 1 cup shredded lettuce
- 1 cup shredded cheddar cheese
- ½ cup diced tomatoes
- ½ cup sour cream for serving
- salsa for serving
Instructions
- Preheat oven or grill to 450f degrees.
