Crockpot Potato Soup
We’re having some weird weather this week in my part of Virginia. It actually got cooler and the humidity dropped. It got cool enough at nights where you could actually open up the windows. That’s always a good feeling in summer, right? Whenever we have a few cool days like that, I always think of making soups. It’s just one of those psychological things I guess. Ha! So, I put a couple of my favorite soups on the meal plan this week. Crockpot Potato Soup and my Copycat Olive Garden Zuppa Toscana. The Crockpot Potato Soup can be made completely vegetarian and meatless by not adding crumbled bacon on top and substituting chicken stock with vegetable stock.
