Crock Pot Taco Soup (+Video)

Crock Pot Taco Soup combines ground beef, ranch seasoning, taco seasoning, Rotel, corn, diced tomatoes topped with sour cream and cheese!


I suppose in the winter time I crave soups more than any other time of year. What’s not to love? They are warm and comforting and just beg to be eaten with a bit of bread. This is one of those soups that are fun to make and eat. You can really dress this soup up however you like.

  • Add in different kinds of beans like black beans or kidney beans.
  • Have some fun with the toppings: sour cream, salsa, shredded cheese, tortilla strips or chips, and green onions are just a few of our favorites!
  • If you’re serving this up to guests, you can have lots of different bowls with all kinds of toppings to choose from.
  • Bake up some MEXICAN CORNBREAD to serve with it and you just can’t go wrong.

  • ground beef
  • onion
  • beef broth
  • diced tomatoes and green chiles (Rotel)
  • pinto beans
  • corn
  • taco seasoning
  • ranch dressing mix
  • water

In a pan, brown and crumble ground beef along with diced onion. I season my ground beef with a little salt and pepper.

Drain excess grease. Put ground beef and onion mixture in slow cooker. Add in diced tomatoes, corn, pinto beans and beef broth. Stir in ranch dressing mix and taco seasoning mix.

Fill tomato can with water (about 1 cup.) Add water to soup mixture.

Give it all a good stir and set on low for 6 to 8 hours.

  • 1 pound ground beef
  • 1 small onion, diced
  • 15 ounce can beef broth
  • 15 ounce can diced tomatoes and green chiles, undrained
  • 1 can pinto beans, undrained
  • 15 ounce can kernel corn, undrained
  • 1 packet taco seasoning
  • 1 packet dry ranch dressing mix
  • 1 cup water
  • optional toppings: crushed tortilla chips, sour cream, shredded cheese, sliced green onions


  • In a pan, brown and crumble ground beef along with diced onion (season with a pinch of salt and pepper). Drain excess grease.
  • Put ground beef and onion mixture in slow cooker.
  • Add in diced tomatoes, corn, pinto beans, beef broth and water.
  • Stir in packets of ranch dressing mix and taco seasoning.
  • Cover and set on low for 6 to 8 hours.
  • Serve and top with: crushed tortilla chips, sour cream, shredded cheese, sliced green onions

    I made this soup. Very tasty and my husband loved it. I only had a quart of canned corn so I didn’t add corn. My husband finished the soup for breakfast the next morning. I WILL make this again.

    This soup is so tasty and quick and easy to prep. I added a bit of Velveeta and cream cheese for 20 mins at the end just to use up ingredients in my fridge. lots of ways to adapt this to your personal taste. was not spicy but has great flavor!

    I made this yesterday, and it was so good!!! Several times; my husband said “ this is really good!!” While he was eating it.
    Such an easy recipe, too!
    I am disabled; so easy crockpot meals that I can put together in the morning is a huge help for us. I just don’t have the energy to make dinner in the afternoons. Even more crockpot meals would be great for us. Thanks Brandie!!

    Quick, easy, and super delicious. Now that’s a winning combination!
    My first use was a double recipe for a supper meeting. I matched it up with Mexican-style cornbread for another winning combination. In fact 2 ladies asked for both recipes.
    Considering there are millions of taco soup and cornbread recipes out there, and considering it was my first try at both, I consider it high praise, indeed. Thank you, Country Cook!

  5. Can you freeze this soup? It is only me and my sister so 6 to 8 serving would last us a couple of meals.

  6. Could you just cook this on the stove after browning the ground beef? I mean since all the other ingredients are already cooked?

    1. You sure could! Cooking it in the slow cooker just gives all those flavors time to really meld together and for the meat to soak up all the flavors too. But you could get the same taste by letting it simmer on low on the stove for an hour or two.

    Taco Soup is one of my favorite soups. I use the dry Fiesta Ranch Dressing Mix instead of the regular Ranch Dressing Mix. I like the taste better.

    1. You could. You’d need to brown the ground beef first. I haven’t tested it yet though so I couldn’t give you an exact time so it may need some experimenting. Perhaps 15 minutes on high pressure and maybe a natural release.
