No-Bake Chocolate Chip Cheesecake

This No Bake Chocolate Chip Cheesecake recipe is one of our favorite easy desserts. Cream cheese, chocolate chips and Oreo pie crust!

A CREAMY NO-BAKE CHEESECAKE

I started making this No-Bake Chocolate Chip Cheesecake dessert when Gene and I were first married. I wasn’t cooking or baking much back then. My Mom had sent me off with a few cookbooks. And in one of those cookbooks was a recipe for a no-bake cheesecake. Basic, easy and hard for me to mess up. Graham cracker crust, a block of cream cheese, some sugar and a tub of Cool Whip.

WHAT ARE SOME OTHER CHEESECAKE IDEAS?

Over the years I have tweaked this recipe using different crusts or adding some fun stuff to it like M&M’s or topping it with fresh strawberries. Or you can add some crushed up cookies like Oreos or like in my NO-BAKE COOKIES AND CREAM PIE. Add in some heath bits or try different chocolate flavors or even some butterscotch chips.

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)

  • chocolate/Oreo pie crust
  • cream cheese
  • sugar
  • whipped topping (COOL WHIP)
  • mini chocolate chips
  • chocolate syrup

HOW TO MAKE NO-BAKE CHOCOLATE CHIP CHEESECAKE:

Using a handheld electric mixer or your stand mixer, combine cream cheese with sugar.

Mix until smooth. It may take a few minutes to get all the lumps out. If you are using a stand mixer, be sure to scrape down the sides a time or two.

Stir in whipped topping.

Stir well to combine. I just do this part by hand. If you use an electric mixer, it tends to whip a lot of air into it and we want to keep it kinda dense so that it keeps a similar texture to baked cheesecake.

 Now add in mini chocolate chips.

  Stir again until combined.

  Spread mixture into pie crust (mixture will be thick.)

Looking good already, but it needs to cool for a bit to finish setting up. Pop it into your fridge for at least 3 hours.

Then slice and serve. And because too much chocolate is never enough, drizzle a little chocolate syrup on there before serving.

Ingredients

  • 1 premade chocolate pie crust
  • 8 ounce block cream cheese softened
  • cup sugar
  • 8 ounce tub whipped topping thawed
  • 1 cup mini chocolate chips
  • chocolate syrup for serving (optional)

Instructions

  • Using a handheld electric mixer or your stand mixer, combine cream cheese with sugar. Mix until smooth. It may take a few minutes to get all the lumps out.
  • Add in whipped topping. Stir well to combine.
  • Now add in mini chocolate chips. Stir again until combined.
  • Spread mixture into pie crust (mixture will be thick).
  • Pop it into the refrigerator to cool for at least 3 hours then enjoy!

    I love this dessert. I know it looks like you used a chocolate Graham cracker crust but I actually found a chocolate pie crust that I used instead only because I like the texture it gives me. My guests loved it.

    I have made this pie for years! I am not a baker but it doesn’t matter because everyone loves this pie, even those who do not like traditional cheesecake!. Loved your story. We have been married 42 years and this is still the only pie I know how to make. I got it from the paper label on the Kool Whip lid decades ago. Thanks for the reminder; this is perfect for Christmas!

    I make one almost the same but it uses the small container (1 cup) of sour cream. It taste just like cheese cake.

    I'm a guy that loves to cook. Although this recipe doesn't really involve any cooking I've made it several times for my wife to take to work. She works at a middle school and the ladies in the office absolutely loved it…..especially the school nurse. I've tried several of your recipes and they are great!!!     Lovely story, I love reading all your "memories" that go along with your recipes! I used mini p~nut butter chips in stead of chocolate, as I'am not a huge chocolate fan.. I know, sad huh! Anyway, it was awesome! Thanks for sharing!!!

    1. You could always make your own if you heavy whipping cream. Super easy, just whip the heavy whipping cream together with a little sugar and maybe even a dash of vanilla and you have home made whip cream! I even make it with almond or peppermint extrac depending on what I'm making the whip cream for. Yummy! I was also wondering if you could use brown sugar instead of the white to make it taste a little more like a chocholate chip cookie? Just a thought. Adding to grocery list now 🙂

I would say fresh whipped cream but the only problem with that is fresh whipped cream doesn't stay "stable" for too long. It eventually breaks down and loses it's thick consistency (unlike whipped topping). I'm not sure what you may have access to that is similar. I'm sorry this uses a product that is hard for you to find!

    Lovely recipe and even better story. We got married 12 yrs ago in Vegas at a little chapel that's now out of business! We were going to do what you did and have a 'real' wedding later, but never did…and that's okay. I think it's great this cheesecake takes you back to your early days!
