A DELICIOUS HOMEMADE DESSERT BAR

If you haven’t noticed I am a huge fan of cherry desserts. I’ve shared recipes for Cherry Pie Bars, Maraschino Cherry Cake and Cherry Pie Bites just to name a few. These Cherry Crumble Bars are fast, fun and simple. You probably have most of these ingredients on hand! So if you are looking for a fun (and maybe slightly addictive) dessert recipe that will feed a crowd, then you have to whip up a batch of these cherry bars!

TIPS FOR MAKING CHERRY CRUMBLE BARS

  • You can use any pie filling for this: blueberry, peach, strawberry, and apple all work perfectly with this recipe.
  • If you want to make your own homemade pie filling you can do that as well. Make sure the pie filling is thick and sturdy enough (not wet) otherwise these bars will not turn out.
  • This makes a large pan already, but you can absolutely double this if you plan on serving more people or are doing a bake sale, etc.
  • These are great warm or cold but they do need to cool slightly before cutting so they will set up and also for the glaze to not melt off the bars.
  • A jelly roll baking dish is approximately 10×15-inches and is one inch high. For thinner bars use a half sheet pan which is approximately 18×13-inches and one inch high.

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)

  • all-purpose flour
  • granulated sugar
  • baking powder
  • salt
  • butter
  • egg
  • vanilla extract
  • cherry pie filling
  • powdered sugar
  • milk

HOW TO MAKE CHERRY CRUMBLE BARS

Preheat the oven to 350F degrees and line a jelly roll baking pan with parchment paper or spray with non-stick spray and set aside. Whisk together the flour, sugar, baking powder and salt then add the butter.

Using an electric mixer, beat in 4-5 tablespoons of butter at a time until the mixture forms a crumbly consistency. Add the egg and vanilla extract.

Stir to combine.

Press half of the dough into the prepared baking dish (we’ll use the rest of the dough for the crumble topping.)

Bake for 12-15 minutes, or until the top turns a light golden color.

Spread the cherries on top of the crust in an even layer.

Crumble around the remaining dough mixture until most of the top is covered.

Bake for another 30-40 minutes, or until the top turns a light golden color. While the bars are baking, mix together the powdered sugar, 1 tablespoon of the milk and the vanilla, adding more milk as needed.

Let the bars cool for 20 minutes before drizzling on the icing.

HOW TO STORE:

  • This Cherry Crumble Bar Recipe can be stored in an airtight container on the countertop for up to one week.
  • These can also be frozen, we like to wrap each individual bar in plastic wrap and then place into a freezer safe container these will keep for up to 3 months.
  • To defrost just remove from the freezer into the refrigerator until thawed, the icing might get a little watery after it is thawed.

  • While the bars are baking, mix together the powdered sugar, milk and the vanilla extract. Start with one tablespoon of milk and add more as needed.
  • Let the bars cool for 20 minutes. Drizzle the icing on top then allow to set for another 15 minutes. Then slice and serve!

    1. I’ve never tried it, I’m sorry. I also don’t think frozen cherries would be sweet enough unless you made them into a pie filling. If you experiment and give it a try, please let me know how it goes!

    No cooling necessary between steps 6&7. I’ve made similar bars using marmalade and fruit preserves and just carefully spread over hot base, add crumble topping and back into oven.
