Have you ever had one of those weeks, days or maybe months where you feel like you are about five steps behind where you need to be? That is exactly how I have felt since the end of the holidays. I’m getting stuff done but it is all at the last minute. I’m like a three year old dragging her feet pulling her blanket behind her. That time between the holidays and spring seems to drag on, doesn’t it? We had a couple of days where the weather felt almost spring-like here in Virginia. It was warm and breezy and I opened the windows. It felt gorgeous! The sun finally came out and I got my mojo back. And then the next day the freezing rain came back. I swear I am solar powered. I need to the sun to charge my batteries. I had to shake my fist at Old Man Winter!
Oldies but goodies!
For this week’s meal plan, I went back to some old favorites. I always like a good combination of comfort foods and easy to prepare foods. Cheeseburger Soup, Grandma’s Goulash, Stuffed Shells, Tortellini Skillet and Crock Pot Chicken and Gravy are always a hit. And of course, I can’t forget about dessert! Some simple Peanut Butter Rice Krispies Treats (childhood favorite for my inner 3 year old) and Butter Pecan Cheesecake will satisfy that sweet tooth perfectly!
