Banana Cobbler

Homemade Southern Banana Cobbler is so easy to make and the flavor is incredible. A thick filling topped with a pecan streusel!

A DELICIOUSLY DIFFERENT COBBLER RECIPE

I love a good fruit cobbler. Especially in the summer. There’s just something about those fresh summer fruits topped with a fluffy cake-like topping. But what about bananas? I mean, it’s a given that Peach Cobbler is always a hit along with Cherry Cobbler and Apple Cobbler. So why not the humble banana? It’s a pretty inexpensive fruit and it bakes up really well and adds tons of flavor.

TIPS FOR MAKING BANANA BREAD COBBLER

  • Since this recipe was first posted, Sir Bananas Bananamilk has gone out of production. So how I ended up updating this recipe was to substitute the banana milk with regular milk and added a teaspoon of banana extract to the milk for that original banana milk flavor! Or you could even use a banana flavored protein drink.
  • I love White Lily self-rising flour. It makes any baked goods so much better!
  • Use ripe bananas – not greenish bananas. The riper the banana, the sweeter the cobbler.
  • If you only have salted butter, just use it. It will still turn out fine.

INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)

  • packed light brown sugar
  • self-rising flour
  • unsalted butter
  • uncooked old-fashioned oats
  • chopped pecans
  • sugar
  • milk
  • ripe bananas

HOW TO MAKE BANANA COBBLER

Preheat the oven to 375F degrees. Spray a 2-quart (or 9×9) baking dish with nonstick cooking spray. Make the streusel: In a bowl, using a fork, stir together the brown sugar, flour and butter, until crumbly. Then stir in the oats and pecans. Set aside.

Make the filling: In a medium bowl, whisk together the flour, sugar and milk just until blended. Whisk in melted butter.

Then pour into the prepared baking dish. Layer banana slices on top.

Then crumble streusel topping evenly on top of the banana layer.

Bake for about 45-50 minutes until golden brown and no longer jiggly.

Dig in! Optional: Serve with a scoop of vanilla ice cream.

Ingredients

For the topping:

  • ¾ cup packed light brown sugar
  • ½ cup self-rising flour
  • ½ cup (1 stick) unsalted butter, softened to room temperature
  • 1 cup uncooked old-fashioned oats
  • ½ cup chopped pecans

For the filling:

  • 1 cup self-rising flour
  • 1 cup sugar
  • 1 cup milk
  • 2 teaspoons banana extract (optional)
  • ½ cup (1 stick) butter, melted
  • 4 rips bananas, sliced

Instructions

  • Preheat the oven to 375F degrees. Spray a 2-quart (or 9×9-inch) baking dish with nonstick cooking spray.
  • Make the streusel: In a bowl, using a fork, stir together the brown sugar, flour and butter, until crumbly. Then stir in the oats and pecans. Set aside.

Notes

  • This original recipe was made with a banana milk product that is no longer produced. So I have updated the recipe to just use regular milk. Also, I have made this with a banana protein drink and it turned out great as well. You could also add about a teaspoon of banana extract to the milk to get a stronger banana flavor.
  • Make sure your bananas are ripe. They should have brown spots on them. This will produce the best flavor.

    Even yummier than I was expecting! I used plain almond milk instead of the banana milk, and no banana extract (I dislike the flavor of artificial banana). Everything else I followed to the letter and it was a huge hit! My new favorite banana recipe! 🙂

    Is there any other milk you suggest? I just searched for Sir Bananas milk
    and came across their post on Facebook the milk has been discontinued. :/

    This is so good! I used 1/2 cup of banana pudding and 1/2cup of milk instead of the banana milk and it was fantastic.
    Refrigerate after or just leave room temp?

    My Houston, TX Kroger doesn’t carry this milk. What do you think about half whole milk and half banana pudding as a sub?

      Hi just found this and can’t wait to make You can make your own banana milk very easily. Here is how:

      1. 1 large ripe banana.
      2. 1 cup milk.
      3. 1-1/2 to 2 teaspoons sugar.
      4. 1/2 teaspoon vanilla extract.
      5. Place all in blender and blend until smooth
