Happy New Year!
I hope you’ve had a great start to the New Year! Now, I know a ton of folks are looking for diet foods this time of year. You won’t find that here. Mainly because I don’t “diet.” And it’s not because I don’t need to. Trust me, I have lots of cushioning on these bones – ha! But as you get older, most of us realize that yo-yo dieting just does not work and it makes you feel worse in the end. So, I just try to eat less. I still eat all the foods I love so I don’t feel like I am depriving myself but I just eat smaller portions than I used to. I drink lots of water. I quit soda years ago and now just have it as a special treat now and then. And I don’t eat after 7pm (mainly because I have acid reflux – thanks Lupus!) I feel like this is a much more reasonable attitude for me to have because it is something I can easily stick with and there isn’t the constant up and down and I feel good about it. Food is enjoyable and it is a gift to us. So I want to enjoy it. Just in moderation…
So this week’s recipes are all about recipes that can make and re-heat the next day for your work lunch. The Mexican Shredded Beef is an absolute must-make! You will want it in burritos, tacos, taco salads or all by itself – so good! And of course, it’s a crock pot recipe and we love that, right?
