Bubble Up Pizza (+Video)

Bubble Up Pizza is a refrigerated biscuit casserole that uses pizza sauce, sausage, mozzarella cheese and pepperoni to make an easy dinner!

A FUN AND EASY DINNER

So, first let me say, I originally had no intentions of posting this recipe. Mainly because I thought most folks had heard of it or were already making it. So, I didn’t expect it when I got an overwhelming response after posting the Bubble Up Lasagna recipe last week. Everyone wanted the Pizza version – so here it is. I hope you love it!

TIPS FOR MAKING BUPPLE UP PIZZA:

  • Get creative with this! Add in any toppings that your family enjoys! Green peppers, onions and mushrooms are all great add-ins.
  • If you don’t like the sausage, no problem, just leave it out of the recipe.
  • Use ground beef or ground turkey instead of ground sausage.
  • If your family loves a lot of sauce, you can add in another jar to this. This is so easy to really make the way your family will enjoy!

INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)

  • Italian sausage – you can use hot or mild sausage or you can even use ground beef if you prefer.
  • pizza sauce – you can use store-bought if you want to go all out and make homemade pizza sauce then go for it! I like Furmano’s (pictured below) when I can find it and Prego makes a good pizza sauce too.
  • Pillsbury Grands Jr. Biscuits – you want the smaller biscuits not the larger Grands biscuits – it will usually be about 10 biscuits per tube.
  • mozzarella cheese – I like the mozzarella that has a bit of cream cheese in it – I think it melts better but again use what you like here. You can even have fun and add some different cheese to the mix – pepper jack would give it a nice kick of heat!
  • pepperoni slices – you don’t have to just top with pepperoni, you can top with any of your favorite pizza toppings – have fun with it!

HOW TO MAKE BUBBLE UP PIZZA:

Preheat oven to 375F degrees. Spray a 9×13-inch baking dish with nonstick cooking spray. If you are not using the pre-cooked sausage, you’re going to need to brown and crumble the Italian sausage and drain any excess grease.

Cut each biscuit into eighths. Most recipes for this call for cutting these into quarters and we just find that size to be too big so we like them a bit more bite-sized. Note: This is also a good teaching lesson for the kiddos. A fun way to introduce fractions.

In a bowl, combine pizza sauce with cut-up biscuits and cooked sausage. Stir to combine.

 Spread this mixture evenly into prepared baking dish.

Then top with shredded cheese and sliced pepperoni. Little hands love to help with this job!

I like to sprinkle the top with some dried parsley. It doesn’t affect the flavor at all but it’s something I do because I think it makes it look pretty. But if you don’t already have some in your pantry, then don’t go out and buy it just for this.

Bake uncovered for about 25-30 minutes until biscuits are cooked through. It is closer to the thirty minute mark in my oven.

 Then serve. This is great served with a salad.

Notes

  • If you can’t find the 12 ounce can of biscuits, just purchase two of the smaller (6 ounce) cans of biscuits.
  • Serve with a crisp, green salad. Add in any toppings that your family enjoys: green peppers, onions and mushrooms are all great add-ins.

    During the beginning of the pandemic, I was home and on a cooking frenzy to calm my nerves. I found this recipe and it was so simple and amazing! I have customized it with many other ingredients and cooking methods (cast iron skillet). So simple and quick to make. Perfect when the young one invites friends over at the last minute!

    woo wee mama! this is tasty but i do worry about the calories…399k calories = 6 months worth of calories… in one pizza!

  6. I’ve had this recipe for probably 20 years. It was given to me by another nurse I worked with who brought it in to a potluck we had at work. She called it Pizza Bubbles and made it in a tube or bundt pan. It’s been a favorite ever since.

    Absolutely delicious! Used 1# sausage, 1 sweet onion sautéed with 1# hamburger. I added banana peppers to the end mixture of meat and biscuits. Used regular GRANDS (didn’t have Jr’s) and cut them into 1/8’s, but used a little extra sauce. Wife loved it!

    I made five pans of this for some special needs adults and their mentors. Everyone loved it! I made the recipe exactly as written and because it is so easy, had two of the young adults helping me. We gave plenty of second servings and no one passed on it. So good, and great for a crowd.     I made the recipe and it was really good. I added bell pepper and mushrooms to the meat. I used ground turkey and breakfast sausage it turned out great. My husband and I loved it. I will make it again.

    I’ve used my grands biscuits like that too and my husband loves them. But I have just used one biscuit I mash flat then put the fixing on it. I do about 8 but since my son moved in I’ll start making some like yours

  11. Could you maybe lay the biscuits on the bottom of the pan, like a pizza crust then add toppings? Rather than cut into pieces? I think my mom used to make this ….more like a pizza in a cake pan.

  12. Would a dumpling type dough be a good alternative instead of the biscuits as I live in Australia and can’t get that product here?????

    1. Pauley, a lot of people think that our biscuits are like scones in Australia but it really isn’t the same. Our biscuits are fluffy and have their own unique texture. You could make your own refrigerated biscuit dough with some flour, baking powder, vegetable shortening (or butter) and milk. If you Google ‘refrigerated biscuit dough’ you should come up with some good homemade substitutes. 🙂

    I have made a layered version of this before, but I found this recipe to be much more flavorful. I thawed and crumbled frozen meatballs, added chopped onions, green peppers, green olives, pepperoni, and diced jalapenos. Mixing the sauce with the biscuits kept everything moist. I baked mine for 40 minutes and it was perfect, no doughy spots and not too brown on bottom. A definite do again!!

  16. Hi Karen, it's a 9×13 baking dish. Also, there is a couple of recipe search functions on here. On the right side of the page there is a search box or you can click on the tab at the top that says "Recipe List" and you will find all of the recipes listed by type and alphabetical order.   17. What size pan do you bake this yummy sounding pizza in? Also just wondering have you ever considered adding a search function for your website so viewers don't have to scroll through hunting for recipes, instead we could search for individual dish recipes?

  18. Hi…here in Argentina we don´t have that kind of biscuits. The recipe looks great so do you have any recipe for that kind of biscuit in order to make them from scratch? Thanks in advance
