One food item I always seem to have in my pantry or in my fridge are flour tortillas.
They are good for so many things.
Tortillas can be made into so many different types of snacks for kids (and grownups).
You can cut them up and fry them or bake them.
You can make cinnamon chips, quesadillas, tortilla pizzas....
The possibilities are endless...and easy on the wallet too.
Sometimes when I only have a few left, I like to make this taco bake.
It is so filling and gooey and cheesy.
My husband, who is not really a fan of Mexican style dishes, really loves this one.
It came about after my favorite Taco Bake kit made by Old El Paso went away.
So I had to come up with my own version.
And if y'all will allow me to toot my own horn for a minute, I think this one tastes even better than Old El Paso's kit version. It's a great dish for beginner cooks and perfect for all you super busy cooks. And the leftovers heat up well the next day too.
That is...if you have any leftovers.
Ingredients:
1 pound ground beef
1 packet taco seasoning
* water as called for on back of seasoning packet
3 large flour tortillas (8-inch size)
1/2 cup Salsa Con Queso
1 1/2-2 cups shredded Mexican cheese blend
Directions:
Brown and crumble ground beef. Drain excess grease.
Add in taco seasoning and water (following directions on back of seasoning packet).
Once the taco meat is ready, turn off heat and add in 1/2 cup salsa con queso.
I like a mild salsa con queso.
This is a spicy dish so a hot salsa con queso would just be too spicy for us.

If you have anyone in your family that is very sensitive to spicy dishes, you could always use a regular, spreadable cheese dip.
Give it a good stir, until thoroughly combined.
It don't look all that pretty, but don't worry, we're gonna dress her up a bit.

Preheat oven to 350F degrees.
Spray an 8-inch round baking pan with nonstick cooking spray.
Layer the bottom of the pan with a flour tortilla.
I like to use a springform pan just to make it a bit easier to get out after it is finished baking. But this taco bake is pretty easy to slice up and serve even without the springform pan.
Now add about 1/3 of the ground beef taco filling on the the first layer.
Then add 1/3 of the shredded cheese.
Continue until you are done with all the layers: another tortilla, more taco mixture, more cheese. Bake at 350F degrees for about 15-20 minutes. Until cheese is melted and edges are slightly golden brown.
Allow to cool for a couple of minutes.

how many servings did this make? I want to try tomorrow (just cooking for one) and use my leftover corn tortillas (6") and halve the ingredients and hopefully make two of these, one for leftovers, what do you think?
ReplyDeleteAnon. - I would say this serves maybe 4 people (1 serving a piece). It really just depends on how big of a slice everyone wants. It may just feed 2-3 depending on how many servings everyone would want.

ReplyDeleteMmm! I just made this with a few substitutions: ground turkey with some dried minced onions, poultry seasoning, and chili powder. I had no taco seasoning, and my heartburn would have been out of control with the original. The outcome was delicious! It was the perfect balance of heat and flavor. It was a little too cheesy for my husband, but the kids (19 months and 4 years old) and I devoured it.

ReplyDeleteThanks so much for this recipe! I made it with cheese whiz since the kiddos don't like spice but added a tiny bit of salsa. It was amazing! I also wanted to point out that if you are on a budget or want to stretch out your meat, you can either add a can of refried beans or a can of bean and bacon soup. When I cook this I use 1 lb burger and one can of either mentioned above, it is enough to make 2 dishes with it. Oh, and they freeze well also. :) Thanks again!

I did change it a little by adding some salsa and onions between the layers, and sour cream and lettuce on top which turned out very good. ReplyDeleteI too made a few additions/substitutions but kept the basic recipe and it was delicious! We had leftove chicken so I shredded it and used that with the queso. Was definitely a bit drier since ground beef newly sauted has quite a bit of oil but we just added a little olive oil and more queso when heating it. We added bell pepper, onion and corn as a layer and after it was done baking, topped it with fresh tomato and avocado. Yummy!!!

ReplyDeleteWhile that was inthere stove, I microwaived a package of frozen veggies - carrots, cauliflower and broccoli. Once done, I added it to the crumble mixture with one can if Cream if Mushroom soup.
Seasoned it with lots of fresh ground pepper. Then followed your instructions. It came out Fantastic!!!

We've made this several times and it is always a hit. The only thing I change is to add some diced green pepper and onion to the ground beef. My husband requests this dinner often. It's a great twist on taco night. Thanks for such an easy and yummy recipe!

ReplyDeleteI made this before only I didn't use the cheese spread but I used sour cream in it with the meat and taco seasoning and something else. I used what I had in the fridge and it came out so good. One of those nights at the end of the week, when you have to go to the grocery. it turned out really good so I will definitely try this..thanks
ReplyDeleteThis is very good! In fact, my son says it is now his favorite dinner and I just made it now for the second time since he's been bugging me to make it again. I do use half of the salsa con queso (medium spiciness) and half Cheez Whiz so it isn't too spicy. But my son likes spicy more than I do and I don't think it's too spicy this way. The only change I made was to alternate ground beef and chicken in the layers, because I had leftover chipotle marinated chicken that I had to use up. I put sour cream, diced tomatoes and green onions on top. Thanks for a yummy recipe that my whole family enjoyed.
ReplyDeleteI have been letting my two boys pick out meals I have pinned on Pintrest. My 8 year old picked this one and was very excited. I made a few changes to make it a little healthier.... I used ground turkey instead of beef. I used a cheesy taco seasoning and salsa instead of the Queso dip and whole wheat tortillas. My family LOVED it and I liked the fact that I was able to "hide" some good things in there for them.

My boyfriend couldn't stop telling me how good it was, and he is hard to please with Mexican food, since nothing ever compares to his mom. My husband is an Airmen in the USAF, on any given day i can be feeding between 1-4 of his friends, theyre in love with pintrest because ive been getting some awesome recipes =] This took me seriously 25 minutes start to finish. I baked it about 15 minutes... and made my own queso with velvetta and salsa. My husband and his friends approved. HIGHLY lol. if youre feeding more than 3 people double your recipe, but this served 3 adults with one peice left over. Thank you!!
ReplyDeleteI just finished preparing this to pop in the oven. It looks and smells yummy. We had a late lunch so I'm waiting a little longer. I've had the strangest thing happen....I had gall bladder surgery in April and then pancreatic surgery in August....all is well now, but ever since those surgeries, I've craved Tex-Mex foods....wonder why. I always liked them all right, but never really craved them.....so send any and all recipes. Thankful there are so many easy recipes out there that feed my cravings.
