Peggy's Fresh Apple Cake ~ Knewlywifed

I feel so fortunate to have another friend joining me in the kitchen today.
Today's lovely cook is Brittany from Knewlywifed.
Ain't she purdy? And she has a gorgeous and bubbly personality to match.
She's a country girl who is documenting her journey of being a wife, a momma and all the fun in between.

And she also happens to really love cooking and baking. 
I'm so happy she decided to share a favorite sweet with us today. 
And what could be better right now than something made with apples?

Hello, Country Cook fans! Let me first say it’s an absolute honor to be guest posting for Brandie today. I’m such a fan (and practically a neighbor). Being a fellow country girl myself, I love the “good ole’ home cookin’” style of Brandie’s recipes! She featured a delicious hamburger steakand gravy recipe on my blog a few weeks back, and when she asked me to do the same, I had to pinch myself.

And now, a quick bit about me. I’m Brittany, from Knewlywifed. I blog about my journey as a (newish) wife, mom, and not-so-domestic goddess. I feature a few recipes every now and then, too. As I say on my blog, I like food that is good, ingredients that are simple (and that I can pronounce), and recipes that are easy to make.

I also love sweets.

So I naturally decided to share my favorite apple cake recipe. It’s so good. I eat it for breakfast sometimes, I don’t feel guilty one bit! My sweet momma got this recipe from her friend Peggy, so I call this heavenly dish “Peggy’s Fresh Apple Cake”.

Here’s the skinny:

Peggy’s Fresh Apple Cake
Ingredients:
3 eggs
1 1/2 cup oil
2 cups sugar
1 tsp. salt
1 tsp. baking soda
3 cups flour
3 1/2 cups chopped apples (I used Granny Smith apples. Who the heck is Granny Smith anyway?)
1 cup pecans
1 tsp. vanilla

Directions:
Preheat your oven at 350 degrees.
Peel and chop your apples. I actually use a cheese grater. I think the grated apples hold up better in the cake.
Mix the oil, eggs, sugar, salt, and baking soda well with a mixer. Then add the flour, apples, and chopped pecans and mix it well.
Bake for 45 minutes – 1 hour for a cake. You can also make cupcakes with this batter. If so, bake the cupcakes for about 15-20 minutes.

Next, whip up some caramel icing. You’ll need:
1 stick (or less) of butter (I usually use about 2 tblsp less than 1 stick)
1 cup brown sugar
1/4 cup milk
vanilla
confectioner's sugar (to taste)

Melt the butter over low heat on the stovetop, cooking it for about two minutes. Add the brown sugar and bring it to a boil. Bring it back down from boiling, and add milk, while stirring frequently. Remove it from the heat, and put it in a cold water bath (I usually just put the pot in the sink and add cold water to the sink). Let it cool and then add vanilla and confectioner’s sugar to taste (I usually start with a cup of sugar and go from there. Then pour the icing over your cake, let it cool a bit, and enjoy!

  6. That looks delish but how much does a stick of butter weigh? I don't think it will be as big as a full pack we get here (Scotland) which is 250g.

  9. Two if by sea: I'm sorry, I'm not sure about the weight of the butter, but for me, its usually 7-8 tablespoons. I hope that helps :)

  10. Jo Harvey: I use vegetable oil for the cake. I've never tried any other kind of oil for it, but I'm sure you could experiment!
