My name is Leigh Polson, I am a wife, a mom and a teacher.
I live in Arizona and have two children, ages 9 and 5.
One of our favorite family recipes is my meatloaf. The reason it is one of my favorites is because it's easy to make, tastes great and everyone in my family likes it. My husband and son can be pretty picky so finding something everyone will eat can be difficult! It can also be made in advance and cooked later which is great for a busy mama like me! :) I usually serve it with mashed potatoes and a vegetable.
The recipe came from my efforts to combine different recipes in order to make it perfect.
1/2 Cup bread crumbs
2 tbs. ketchup
1 tbs. dried minced onion
1 tbs. milk
1/2 tsp. salt
1/2 tsp. pepper
1 lb. ground beef
For the Sauce:
1/4 Cup ketchup
1/4 Cup brown sugar
2 tsp. cider vinegar
Mix together the first seven ingredients. Add ground beef and mix to combine. Form into a loaf and place in pan. Mix sauce ingredients together in a small bowl and pour over the top of the meatloaf. Bake at 350 degrees for 45 minutes.
I just love meatloaf. It really is one of those meals that I love to make and eat!
