Today is a beautiful day! We have another fabulous friend in the kitchen with us.
I'm so happy to introduce this next food blogger.
I admire the heck out of her. She is an amazing Mom to her 3 children, she is an excellent cook, AND she takes some of the most beautiful photographs I have ever seen. And we aren't just talking food photos. Yes, her food pictures make you drool, but she can make you giggle and sigh from some of the other pictures she takes.
Her name is Jenni, a.k.a. Mama J, and she writes for her blog, A Little Bit Crunchy A Little Bit Rock and Roll.

Jenni describes herself as a Christ following, husband loving, Arcade Fire listening, mini van driving, concert going, vegetarian eating, food conscious, micro-brew drinking, at times overly sarcastic, occasionally funny, cooking obsessed, artistically bent, photograph taking, homeschooling mother of three.
Shew! Say that three times fast! As I have gotten to know Jenni through her posts and from facebook, she truly is all of those things and more and I'm so thankful to have meet her.

I have had a passion for cooking since I was a kid. Forget Saturday morning cartoons- I was watching Julia Child. I used to pour my breakfast cereal all the while pretending I was on my own cooking show.
Now I'm a mama of 3 kids under the age of 9 living north of Chicago. I put a career on hold to raise and teach my children at home. A friend, who thought the stories I wrote about my kids were funny, encouraged me to start a blog. Between that, inquiries for recipes I'd made and my photography taking off.... A Little Bit Crunchy A Little Bit Rock and Roll was born.

Chocolate Chip Cookie Pie:
1 unbaked pie shell
2 large eggs
1/2 cup flour
small pinch of salt
1/2 cup sugar
1/2 cup packed brown sugar
3/4 cup (1 1/2 sticks) unsalted butter, softened
1 cup (6 ounces) semi-sweet chocolate chips
1 cup chopped pecans or walnuts
Preheat the oven to 325 degrees F.
Beat the eggs, on high, until foamy. Mix in the flour and salt. Next, beat in both sugars and then the butter. (A few specks of butter chunks left in the batter is fine.) Stir in the chocolate chips and nuts. Spoon into the pie crust and bake for 55-60 minutes. Cool on a wire rack.
For the drizzle topping:
Melt 1/4 cup semi-sweet chocolate chips. Add about a 1/2 teaspoon of vegetable or canola oil. Stir and pour into a zipper bag. Cut off a tiny corner and drizzle over the pie.
Optional:
Serve with vanilla ice cream or whipped cream.

ReplyDeleteThis is a favorite pie at my house -- and pretty easy to make. I love how Jenni has dressed it up like I never have with the pretty chocolate drizzle. My kids will think I've gone gourmet on them!
