Ground Beef Stroganoff
This is the best Ground Beef Stroganoff. It’s a flavor-filled creamy hamburger gravy that is delicious served over egg noodles. Budget friendly, family friendly!
Also Known as Hamburger Stroganoff
Beef stroganoff with ground beef is definitely a comfort food dish. For me, it’s up on the list near fried chicken and okra. I love the humble roots of stroganoff. It isn’t pretentious, it uses simple ingredients and it is a cheap dish that can easily feed your entire family. Just some ground beef, seasonings, an easy gravy mix and boom – dinner is served!

I have made this recipe for years and I am sorry that I waited so long to say thank you for such an amazing keeper of a recipe! It’s an easy version of a childhood favorite, and I almost always have the ingredients on hand! I get asked for this recipe a lot!

Frequently Asked Questions:
I always serve ground beef stroganoff on top of egg noodles. Then I like to have a nice vegetable side dish like some Maple Glazed Carrots, or Italian Green Beans.
Sour cream is a pretty integral in flavor to beef stroganoff. You can substitute with plain Greek yogurt. Or you can leave it out if you just really don’t like the taste. In this recipe I use cream of mushroom soup so it is plenty creamy without the sour cream if you really just can’t stand the flavor.
You want to use one that has some fat. That’s where you get good flavor. So I generally use an 85/15 ground beef. You don’t need anything fancy here. Use what is within your budget. If you want to avoid draining any grease, try using a lean meat like 90/10.
Leftovers can be stored in a covered container in the refrigerator for up to 3 days. I don’t recommend freezing as sometimes the creamier ingredients tend to separate when you go to reheat it.

Ingredients Needed: (See Recipe Card Below For The Full Recipe)
- ground beef – if you use a lean meat, you won’t really have any grease to drain. You could also easily make this with ground chicken or turkey.
- onion – if you don’t like onion, just leave it out.
- garlic – this recipe works well with freshly minced garlic or the jarred garlic (whichever is easiest or whichever you prefer.)
- salted butter – you can use unsalted butter.
- all-purpose flour
- beef broth – if you want to keep the sodium down, try using low or no salt beef broth.
- sour cream – this is a love/hate ingredient but it is essential to any stroganoff recipe so I don’t recommend skipping it. You could substitute with plain Greek yogurt or creme fraiche.
- cream of mushroom (or chicken) soup – I have recipe for Homemade Cream of Mushroom Soup and Homemade Cream of Chicken Soup if you prefer homemade. Use whatever flavor you like.
- egg noodles

How To Make Ground Beef Stroganoff
Bring a pot of water to boil and begin to cook egg noodles according to package directions. In a large skillet over medium high heat, brown ground beef along with the onions and garlic until thoroughly cooked. I like to leave chunks of ground beef and not break it up too small. Drain ground beef to remove excess grease from pan. Put pan back on stove over medium heat (don’t add the ground beef back in yet.) Add butter to pan and let it melt.

Then add flour to pan, whisk and let it absorb butter. Now add beef broth and whisk vigorously to remove any lumps, turning the heat up to high, bringing it to a boil for 2-3 minutes until you see it thicken slightly.

Bring temperature down to medium and whisk in sour cream and cream of mushroom soup. Stir until mixture is thoroughly incorporated. Add salt and pepper. Keep tasting mixture until it is seasoned the way you like. I probably use a good teaspoon and half or more of salt and pepper. If it gets too thick on you, just add a tad more beef broth. Add ground beef back to mixture. Stir and then allow to simmer for about 5 minutes.

Serve over egg noodles.

I don’t usually comment but this turned out really good, both of my kids loved it. The only thing different was that I used golden mushroom soup instead because that’s what I had 🙂 we added cheese on top. Thank you so much!
Great and simple recipe. Husband loves mushrooms so I added extra.
Thanks so very much Christine!
Made this for dinner tonight. One of the kids just walked through looking for leftovers. Now he’s in his room, mad I threw them away.
Mom! How dare you?! Ha! So happy he enjoyed it so much though! ❤️
LOVE,, LOVE,, LOVE,, LOVE IT!!!! SOOOO AMAZING,, THNX SO MUCH!!!!
Love hearing that! Thank you Lisa! Yay!
I made this mouthwatering Easy Ground Beef Stroganoff today with a slight variation. Instead of egg noodles, I opted for toasted garlic sourdough rounds. I also used whole wheat unbleached flour instead and just let that cook for 2-3 minutes longer. At the end, I sprinkled a tsp of Cayenne pepper for an extra warm tummy goodness. This recipe was easy to follow and will double it next time for company on a cold day. Thank you for sharing!
This was absolutely scrumptious! My husband had three helpings! He can’t stop going on about how yummy this is! I usually don’t follow recipes and I tweak them when I do use them but I made this exactly to your recipe and I am so happy I did!! Thank you so much!!
I have made this recipe and it’s fantastic! it tastes just like how my mom used to make it. I like to make big batches and freeze individual portions. This is a great recipe for that as long as you don’t add the sour cream until after it’s thawed and has been heated up. So I make it following the recipe, pull out what I need for that night’s dinner and add sour cream to what will be eaten that night. I put the rest into the freezer in individual containers for easy dinners later on.
I wanted something simple to make for dinner tonight and this recipe fit the bill. My husband really enjoyed it.
Loved this! Subbed fettuccini because that’s what I had on-hand. Also, if there’s a tad bit of grease left after browning the meat, you can sprinkle the flour right over it, stir, then begin to add the beef broth for thickening. Kind of like making sausage gravy in the south. Saves a step anyway.
Delicious, my picky son loved it, so we will make it again!
Super tasty! Great way to use a roux. We also subbed greek yogurt for the sour cream, it worked Perfectly for that slight sour snap! This will DEFINITELY be a do again for us. Thanks for Sharing!
From the Upstate of SC !

This recipe was delicious!! Thank you! I didn’t change anything
Just made this, i substituted cream of celery for the mushroom (we are not fans of them) it was fantastic! We both had seconds
Excellent recipe!
Fabulous! Substituted cream cheese for sour cream because it’s what I had on hand. Turned out great.
Can I freeze the leftovers? Wondering if the dairy will hold up to freezing or separate.
I make this in large portions so I can freeze it for later. I separate what will be eaten immediately and only add sour cream to that portion. I freeze the rest and add the sour cream after it’s been thawed and reheated. it’s turns out fantastic.
Hi does this require condensed cream of mushroom or just normal? Thanks
What can I substitute for cream of mushroom soup?
I discuss that in more detail above but basically you can use whatever cream soup you enjoy 🙂
I don’t like cream of mushroom so always substitute with cream of chicken.
made this this evening for the two of us my husband and I, can I freeze the sauce without the noodles? it made a lot of sauce
I just whipped this up in no time I had all the ingredients on hand already. This will definitely be in my dinner plan rotation delicious
fantastic recipe
My husband couldn’t stop raving about how good this was! Huge hit in our house and he told me to put it on the regular menu rotation (and he’s picky so that is saying something lol)
I moved my 94-year-old mom in with me a few months ago. I love to cook, but my time is now very limited. I’m always looking for fast, easy, tasty recipes. This one fits the bill.
I did add mushrooms and peas, but other than that made it just as written and it was very good.
The recipe made quite a lot, and I’m wondering if you have ever frozen leftovers?
I was planning to add mushrooms and peas as well to get some veggies in there.
Love beef stroganoff!!!
Made it exactly to the recipe and it was delicious! Our new favorite!
I had a recipe very similar to this one years ago that I can’t find but it had a little
cooking sherry. Should I add some? If so, how much?
I’ve never added cooking sherry – sorry
Loved it, only thing I will change next time is add a can of sliced mushrooms.
I made this recipe2 different ways. Both were made with hamburger and noodles
1) I did cream of mushroom soup with garlic and onions, and
2) with sour cream, and added mushrooms. Both were delicious! No matter which one you do, it is an easy comfort food.
Very yummy and hubby approved!
Made this tonight and family loved! I added a little more garlic and some Worcestershire sauce also.
Great recipe! Adding the beef broth made a huge difference. Thank you so much!
