And I am very happy to announce the first cook in this series. She is a very near and dear friend to me. Her name is Sieglinde (we call her Sig) and she writes for her blog, Siggy Spice. Sig was one the first people, along with our mutual friend Jill and my husband, who really encouraged me (read: pushed) to start a food blog. Sig and I meet because of food but our friendship has evolved and she has become a constant source of encouragement and laughter for me.
Whether she is whipping up light and healthy meals or serious comfort food, you can always depend on Sig to deliver an amazing meal. I have made so many of her dishes and I have had success with all of them. She only posts recipes that she and her family love and she is quick to tell you if something is a total flop!
Y'all are going to love the recipe she brought today. This is a recipe she hasn't even posted on her own blog yet so I feel very privileged that she is showing it here first. I'm gonna quit blabbing now and let Sieglinde do what she came here to do!

Hello, hello, hello!
My name is Sieglinde (pronounced Sa-glenn-da), also known as Mom, Momma, Mommy, Honey, Best wife EVER (snigger, snigger) Sig, and Siggy...as in Siggy Spice. I have been writing my simple, family-style food blog for a little over a year now. It is my goal to infuse all the food I make with health, love, and happiness. I am a work in progress. Progressing as a mom, as a home-chef, as a woman, a wife, a daughter, a friend. I am continually evolving and changing in all areas of my life. Sometimes the changes are seamless, beautiful transitions, but most of the time, not so much. :)
Blogging has been such a creative and emotional outlet for me. Since the time I started Siggy Spice, I have met some truly dear friends. Brandie definitely falls into that category. As I am sure all of you already know, she is just a wonderful, delightful, beautiful person inside and out. She makes my heart smile, my cheeks hurt from laughing, and my belly sigh with contentment when it has had some of her scrumptious food. Therefore, when she asked me to guest blog for her, I did not hesitate to oblige. Anything for my kitchen sista!
The recipe I am sharing today is one that is perfect for the warm weather coming up. If you are anything like me, the desire to cook blows right out the door the second the air conditioner turns on. This fusion of flavors makes a scrumptious, light and easy meal.
Bowtie Teriyaki Chicken Spinach Salad
Recipe slightly adapted from: Sister's Cafe
Ingredients:
8 oz. Bowtie pasta, cooked and cooled
1 bag of fresh baby Spinach
1 small can Mandarin Oranges
1 Red Pepper, chopped
1/2 can sliced Water Chestnuts
1/2 bunch Green Onions, chopped
1/2 cup Honey Roasted Peanuts or Cashews
1/2 cup fresh Flat Leaf Parsley
2 TBSP Sesame Seeds, toasted
2 cups rotisserie chicken, chunked up
Dressing:
1/2 cup Canola Oil
1/3 cup White, Red, or Rice Wine Vinegar
1/4 tsp. Salt
1/4 tsp. Black Pepper
1/3 C. Teriyaki Sauce, I use Trader Joe's Soyaki
2 1/2 TBSP Sugar
Directions:
Cook bowtie pasta according to package directions. Drain and cool while whisking the dressing together in a large bowl. Marinate cooked bowtie pasta and chicken in the dressing for 1 hour or longer in the fridge. Combine salad ingredients in a large (really large) bowl and pour the teriyaki sauce, pasta, and chicken over the salad. Toss together and serve.

I was so excited when she e-mailed me this recipe that I went out and purchased the ingredients I need it so I can make it this week. This is one of those salads that will really fill you up and is a whole meal all in one.
