It's Wednesday and that means another guest blogger is joining us here on The Country Cook. I just know y'all are going to fall in love with this next amazing gal.
Her name is Holly and she writes for her blog, Life as a Lofthouse.
She is the girl next door that we can all relate to. She's incredibly sweet, always has something funny or positive to say and she can whip up a mean meal on a moment's notice. Her focus is on family-friendly meals and desserts.
She also has many seriously tasty figure-friendly meals as well.
And I am so proud to call her a friend. So without further ado, here's Holly!

Hi everyone! I am so very thrilled and honored to be here onThe Country Cook's fantastic blog! I first want to thank Brandie for inviting me to come over and share one of my recipes. I love love love Brandie! She is the sweetest! Her food blog is one of my top faves. I check it everyday to see what great recipe she has added. Her taste in food and recipes are a lot like mine. Simple, yet delicious. I am not into fancy shmancy ingredients and food. I am a busy mother of 3 beautiful children that keep me hoppin, so when I need to get dinner on the table, it needs to be quick and delicious!
I am married to the sweetest man alive. He is the greatest father to our children. He will even do my girls hair when I'm at work!! How about that! lol It sounds cheesy, but we are true soulmates. He makes me laugh so hard, and we really do have a great marriage! We will be celebrating our 5th wedding anniversay this year on July 1st! I also work full-time for 5 Ear Nose and Throat Doctors. Our clinic is very busy. We easily see close to 150 patients a day. I LOVE my job. I love working in the medical field and helping others. When I get off work, I am busy taking care of my kids, helping with homework, and getting housework done. Dinner time is my favorite. It is when I can experiment in my kitchen. My girls LOVE to help me cook. I hope one day they will have a passion for it as much as I do : )
My food blog is called 'Life as a Lofthouse'. I started it back in October of last year, after some begging and pleading from my sisters and friends : ) I have enjoyed food blogging so much. I never imagined I would meet so many great people along the way, Brandie included! It has a alot of yummy and easy recipes, so come on over and see if you can find something you'd enjoy!
Today I am sharing with you a salad I've been making for a few years. It is one of my hubbys favorites! I got the recipe from a restaurant I worked at when I was in high school. I hope you all enjoy it as much as we do!
STRAWBERRY CHICKEN SALAD
2 servings
- 2 boneless, skinless Chicken Breasts
- 1 tablespoon Olive Oil
- Salt and Pepper, to taste
- 6-8 cups chopped Romaine Lettuce
- 1 cup Strawberries, sliced
- 1/4 cup sliced Almonds
- 1 cup Poppyseed dressing
- 1/2 cup light Raspberry Vinaigrette
Directions: Start by brushing oil on chicken breasts and then season with salt and pepper. Grill chicken on your barbecue or indoor grill pan. Grill for 5 minutes on each side, or until chicken is thoroughly cooked. Set aside.
On two plates, add the romaine lettuce, sliced strawberries and almonds. Slice your grilled chicken and place on top.
Mix together the poppyseed dressing and raspberry vinaigrette together. Pour over the salad and dig in!

Is that an amazing spring and summer recipe or what? I have to confess
that I have already made this salad and I absolutely LOVE it.
The dressing really just sets the whole thing off and if you think you
will not like strawberries in your salad - think again.
This will definitely change your opinion.
